- 4 large baking potatoes
- Cooking spray
- 2 cups grated Cheese
- ¼ cup green Onions, chopped
- Salt and pepper to taste
- Maggie’s Irish Potato Seasoning
- Preheat the oven to 350 degrees and prepare a small baking dish with cooking spray.
- Pierce well-scrubbed potatoes a couple of times with a fork. Then place them 1 inch apart on a paper towel and cook in the microwave on high for approximately 11 minutes or until just softened. Cool for about 5 minutes.
- Cut the top third of the potatoes off and scoop out the flesh from the center, placing it in a separate mixing bowl.
- Mash the flesh of the potato in the mixing bowl and stir in grated cheese, onions, salt and pepper, mixing well.
- Spray the inside of the potato shell with cooking spray and sprinkle the inside of the potato shell generously with Maggie’s Irish Potato Seasoning then place them in the prepared baking dish.
- Evenly divide the potato mixture and spoon it into the prepared shells.
- Lightly sprinkle some more Maggie’s Irish Potato Seasoning on top.
- Place on a baking sheet and bake for about 20 minutes.
