- Premium potatoes
- Cooking spray
- ¼ tsp baking soda
- 1 heaping tbsp Maggie’s Irish Potato Seasoning (or Cajun style if you prefer)
- Preheat the oven to 400 degrees.
- Prepare potatoes by washing and cutting them into bite-sized pieces.
- Precook potatoes by either boiling then draining or microwaving just until they are soft but not mushy.
- Spray potatoes half-cooked potatoes with peanut or olive oil.
- Toss with your preferred flavor of Maggie’s Seasoning.
- Place on a baking sheet and bake for about 20 minutes or until completely done in the middle. Halfway through cooking, stir or toss so they roast evenly. You’ll know they’re tender when a fork inserts easily all the way to the center.
