Maggie's Irish Potato Seasoning had humble beginnings.
As a young boy growing up in the Missouri River bluffs around St. Joseph, Missouri, my grandparents’ home reminded me of the cottages and sod huts on the Moores of Scotland. My grandfather, Thomas Armstrong, was born in Tangipahoa, Louisiana, and later in life moved to St. Joseph Missouri. His family came from the township of Gorton in the state of Donegal, Ireland, bringing with them many Irish Cuisine recipes.
My family blended these traditional Irish recipes with the traditional Cajun spices of the bayou, creating a variety of unique dishes. Maggie’s Irish Potato Seasoning was, of course, one of them.
From Ireland to Louisiana to Missouri
Maggie’s Restaurant opened in 1996 in the small town of Stewartsville, Missouri. The restaurant was located on the main highway running through the town of only 475 people. Within only a few days, Maggie’s Restaurant and the delicious food became famous, drawing visitors far and wide. The most iconic menu item, of course, Maggie’s Irish Potatoes.
The delicious potatoes became a very popular item for catering to large crowds. People loved them so much that the little restaurant, which only seated 50, would sometimes have events of 500 people or more! We closed the state highway to put tables and chairs out on the road to accommodate.
Through the years, we have found that our seasoning for potatoes was so easy to use and complemented so many other recipes that we had to share it with the world.
Crowd Pleasing Recipe
Louie recalls one of his original catering opportunities with fondness and pride. A local school requested Maggie’s cater their athletic banquet.
We prepared 50 pounds of potatoes for about 100 people. Kids lined up and took a few. Soon they returned for heaping second helpings.
Teachers had to start rationing the potatoes to ensure everyone had a chance to taste them! Maggie’s catered many weddings and other events producing the same reaction.
Spice in Space
One thing that always brings crews together on space missions is food. But they are limited to shelf-stable and dehydrated foods supplimented by what they can grow during the mission. Fortunately, the crew can bring their own spices.
The Astrobiological Research and Education Society of the Florida Institute of Technology sends a crew of students and alumni to the Mars Desert Research Station.
In 2020, Dr. Keith Crisman of Crew 219 brought along Maggie’s Irish Potato Seasoning. It became a staple spice in almost all meals helping make bland foods into what the crew decribed as “Mars Gormet.”
